Tournedos Rossini

A little trivia about Rossini is that he was a big foodie, and, pictures of him show that he had the figure to prove it!

One of the most extravagant dishes I have ever is called Tournedos Rossini.  (Tournedos is the word usually used in France for what Americans usually call filet mignon, which in France, is usually tenderloin pork.)

The dish combines thick tournedos (filet mignon) and foie gras. It was said to have been created for Rossini, by the legendary chef, Auguste Escoffier (1846-1935).
